Chocolate Raspberry Nut Pastry

A new recipe to ring in the New Year by Yvette in California for our  Handmade from the Heart Sweepstakes:

Chocolate Raspberry Nut Pastry

1 sheet frozen puff pastry, thawed

7 squares semi-sweet baking chocolate, divided

1 cup whipping cream

6 oz. cream cheese, softened

1/2 cup powdered sugar

2 tablespoons raspberry-flavored liqueur

1 package (6 oz.) fresh raspberries

1/2 cup of your favorite Fisher nuts, chopped to fine pieces

Heat oven to 400ºF.

Unfold pastry sheet on lightly floured surface; cut along fold lines into 3 rectangles. Cut each rectangle crosswise into 4 smaller rectangles; place on baking sheet. Bake 15 minutes or until golden brown. Remove to wire racks; cool completely.

Meanwhile, melt 6 chocolate squares as directed on package; set aside. Beat whipping cream in medium bowl with mixer on high speed until soft peaks form.

Beat melted chocolate, cream cheese, powdered sugar and liqueur in large bowl with mixer on medium speed until well blended. Whisk in whipped cream.

Split each pastry rectangle in half. Spread each bottom half with 3 tablespoons chocolate mixture. Cover with raspberries and nuts and pastry tops. Melt the remaining chocolate square; drizzle over pastries.

Chocolate, Peanut & Caramel Treats

Chocolate, Peanut & Caramel Treats

Ingredients:

1/2 cup unsalted butter, softened

1/2 cup granulated sugar

1/2 cup firmly packed light brown sugar

2/3 cup creamy Fisher Peanut Butter

1 large egg

2 cups All-Purpose Baking Mix (like Bisquick)

2/3 cup almond toffee bits

2/3 cup coarsely chopped Fisher Peanuts

2/3 cup Milk Chocolate Morsels

10 ounce vanilla caramels

2 to 3 tablespoons whipping cream

1/2 teaspoon vanilla extract

2/3 cup Milk Chocolate Morsels, melted

Preheat oven to 350°. Beat first 4 ingredients at medium speed with an electric mixer until creamy. Add egg, beating until blended. Add baking mix, beating at low speed just until blended. Stir in toffee bits, chopped peanuts, and 2/3 cup chocolate morsels. Drop dough by rounded tablespoonfuls onto ungreased baking sheets; flatten dough with glass cup. Bake at 350° for 10 to 12 minutes or until golden brown. Cool cookies on baking sheets 1 minute; remove cookies to wire racks. Microwave caramels and 2 tablespoons cream in a glass bowl at HIGH 1 minute; stir. Continue to microwave at 30-second intervals, stirring until caramels melt and mixture is smooth; add remaining cream, if necessary. Stir in vanilla. Spoon caramel mixture evenly onto tops of cookies; drop small spoonfuls of melted chocolate on top of the caramel and allow to harden.

Suggestion To Package:

Put several cookies one top of one another in a mason jar. Close with the lid and tie a festive ribbon around the top. It looks very neat!

Brownie Mint Fisher Delight

Today we have Brownie Mint Fisher Delight from Marcela in New York.  Many thanks to all our entrants in the Handmade from the Heart Sweepstakes!

Brownie Mint Fisher Delight

2 large eggs

1 cup of cocoa powder, unsweetened

1 1/4 cup of flour

1 1/2 cup of chocolate chips

3 teaspoon of mint powder

1 cup of Fisher nuts

2 teaspoon of vanilla extract

1/2 teaspoon of baking soda

1/2 teaspoon of salt

3 teaspoon of water

1 cup of sugar

1/2 cup of butter

Preheat the oven to 325 degrees.

In a bowl combine flour, baking soda, and salt set aside.

In a pan combine: sugar, butter, and water.  Boil then set aside,

Add in the mint powder, chocolate chips, Fisher nuts and mix in until smooth.

Mix in all ingredients and add in 2 large eggs.

Pour into greased baking sheet pan 13×9 bake for 30 minutes.  Voila!

Fig & Walnut Mini Loaves

Fig & Walnut Mini Loaves Recipe

Ingredients:

* 1/2 cup vegetable oil

* ¼ cup orange juice

* 1 cup brown sugar

* 1 egg

* 1 teaspoon orange zest

* 1 cup all purpose white flour

* ½ teaspoon baking soda

* 1 teaspoon baking powder

* 1/2 teaspoon salt

* 1 teaspoon cinnamon

* 1 cup chopped dried figs *

* 1 cup chopped toasted walnuts **

* icing sugar for topping (optional)

How to Prepare the Fig and Walnut Mini Loaves

Preheat oven to 350° F.

Servings: 6 mini loaves

1. Grease and flour (or spray with cooking spray) 6 mini loaf pans.

2. Combine vegetable oil and brown sugar together in bowl of stand up mixer and mix until well combined.

3. Add egg and mix well.

4. Add orange juice and orange zest and mix until well combined.

5. Combine flour, baking soda, cinnamon, salt and baking powder in separate bowl.

6. Add to brown sugar mixture and mix until well combined.

7. Fold in chopped figs and walnuts. Batter will be thick.

8. Divide batter among the six mini loaf pans.

9. Bake for 30 minutes or until a cake tester comes out clean.

10. Cool fig and walnut mini loaves for 15 minutes.

11. Remove from loaf pans and finish cooling on cookie rack.

12. Sift icing sugar atop of the mini loaves or drizzle with Orange Glaze.

Orange Glaze

Ingredients:

* 1 cup icing sugar

* 2-3 tsp orange juice or more as needed

* 1 tsp orange zest

How to Make Orange Icing:

In a small bowl, stir together icing sugar and 2-3 tsp orange juice or more as needed to make a drizzling consistency. Add orange zest.

For Entertaining or Giving: Savory Treats

Today we are featuring some of the savory treats that were entered in our Handmade from the Heart Sweepstakes.  We hope you find ideas and inspiration for entertaining and gifting “treats” during the holidays!

Savory Treat by CJ from Oregon

2 softened 8 oz. cream cheese bricks

2 teaspoons of pepper

1 teaspoon of dried thyme

1/2 teaspoon of nutmeg

2 teaspoons of garlic mustard

Mix the above ingredients together.

Once mixed shape into a ball and refrigerate

for 15 minutes.

During this 15 minute period chop two cups of Fishers Mixed Nuts and ¾ cups of golden raisins in a grinder.

Use a nice holiday plate.

On a cutting board, place a sheet of wax paper dusted with some powdered sugar and the ground up Fisher nuts and raisin mixture and remove the cream cheese form into a ball roll then roll the ball of cream cheese across the wax paper and through the powdered sugar, Fisher Nuts & raisins mixture. Plate the formed Cream cheese and serve with crackers of your choice.

Treats by Kimberly from Oklahoma

3 tablespoons butter

•1 envelope dry golden onion recipe soup mix

•1/4 cup sugar

•1 teaspoon ground cumin

•8 ounces unsalted Fisher roasted mixed nuts

Preparation:

Blend dry soup mix with sugar and cumin. In a large skillet, melt the butter and stir in the dry soup mixture. Add Fisher nuts and cook over medium heat about 5 minutes or until nuts are coated with the mixture and have browned lightly. Spread out on a baking sheet to cool slightly before serving. May be stored in an airtight container for 1 to 2 weeks.

Makes 2 1/2 cups.

Appetizer by Trent from Wisconsin

1 8 ounce block cream cheese

1 cup sour cream

2 tablespoons milk

1⁄2 cup Fisher pecan chip

2 1⁄2 ounces hard salami, finely chopped

1⁄4 cup finely chopped fresh chives

Ground black pepper

In a medium bowl, whisk cream cheese, sour cream and milk until smooth and well blended. Stir in pecans, salami, chives and pepper. Before serving, sprinkle with additional pecan chips and chopped chives, if desired.

Use holiday themed plates, dip spreaders and adornments such as candy canes, small ornaments and ribbon to make a festive presentation for these treats for entertaining guests at home or given as a hostess gift.

Two Treats to Make and Give: Kentucky Bourbon Balls and Mixed Nut Brittle

In the spirit of holiday giving, we are going to be sharing some of the wonderful recipes and ideas that were entered in our “Handmade from the Heart” Sweepstakes!

Today we are featuring Kentucky Bourbon Balls from Tiffany in Tennessee and Mixed Nut Brittle from Debra in Minnesota.  Enjoy!

Kentucky Bourbon Balls by Tiffany, TN

1 cup Fisher Pecan Chips

5 tablespoons fine Kentucky bourbon

1/2 cup butter, softened

1 package (1 lb) confectioners’ sugar

18 ounces semisweet chocolate

1. Place pecan chips in a sealable bag or jar. Pour the bourbon over the nuts. Seal the bag and allow to soak overnight.

2. Mix the butter and sugar; fold in the soaked pecans. Form into 3/4″ balls and refrigerate for 2 hours.

3. Line a tray with waxed paper. Melt the chocolate in a double boiler over just-barely simmering water, stirring frequently and scraping down the sides with a rubber spatula to avoid scorching. Roll the balls in the melted chocolate to coat; arrange on the prepared tray. Refrigerate 1 hour.

Yield: 3 dozen

Gift Giving Tips:

These are lovely when placed into miniature baking cups and arranged into a 1.5 inch tall tin topped with a bow. When using thicker tins to allow for double layers of bourbon balls, be sure to separate layers with thin cardboard.

Mixed Nut Brittle by Debra, MN:

1-1/2 cup sugar

1 cup corn syrup

1/3 cup water

4 cup Fisher mixed nuts

2 teaspoon plus 2 T butter, divided

1 teaspoon vanilla

1/2 teaspoon salt

Cook over medium heat sugar, corn syrup and water, covered, to a boil. Uncover and cool until candy thermometer reaches 290 degrees.

Meanwhile grease 15 × 10 baking pan (jelly roll pan) with 2 teaspoons butter and set aside. Warm nuts in 2 baking pans in a 325 over for 10-15 minutes until warm (keep warm until ready to use).

Remove sugar mixture from heat and carefully add nuts, vanilla, salt and remaining butter. Quickly spread into prepared pan. Cool completely and then break into brittle.

This type of treat packages well in printed holiday sealable bags with a ribbon and small ornament attached.

Featuring: Beach Spiced Nuts

Today is the last day to enter the Fisher “Handmade from the Heart Sweepstakes! If you haven’t shared your favorite recipe to give that includes Fisher Nuts, be sure to do it today!

Here is a recipe that was entered in our sweepstakes (remember winners will be drawn, no judging involved).   One year a neighbor gave us spiced nuts she had made as a gift – and they were wonderful.   Since then I have to admit a fascination with seasoned and spiced nuts.  This one is a bit different…more on the spicy side than sweet — and I love the name.  It makes me think warm thoughts even though the Chicago area is a bit shivery and cold today!  Another reason is I haven’t ever tried spiced nuts in a slow cooker…but you can bet that I will!  If you try it, let us know!  Remember we always love pictures, too!

Beach Spiced Pecans

1 lb Fisher pecan halves

1/4 cup melted butter

1 tablespoon ancho chili powder

1 teaspoon sea salt

1 teaspoon dried basil

1 teaspoon dried oregano

1 teaspoon dried thyme

1/2 teaspoon onion powder

1/4 teaspoon garlic powder

1/4 teaspoon ground cayenne pepper

Combine all ingredients in a slow cooker. Cover/cook on high for 15 minutes,

then switch to low and continue cooking, uncovered, stirring occasionally for two

hours.

Take nuts out and spread on a sheet pan to cool.

Packaging suggestions: Make a cone of heavy brown packaging paper, wrap

nuts in plastic wrap and tie off with raffia, then place in the cone

with the recipe tucked inside.

Recipes to Give: Cinnamon Crunch with Walnuts and Sweet and Salty Party Mix

Hi all!  This week in honor of the last days of Fisher’s Handmade from the Heart Sweepstakes (if you haven’t entered, the deadline is Friday, December 10),  I am sharing two of my favorite recipes that I make to give as gifts during the holidays.

These Cinnamon Crunch Bars with walnuts and a hint of chocolate can be addicting.  The recipe came from my cousin Lynn.

Cinnamon Crunch Bars

12 cinnamon graham crackers

2 cups finely chopped Fisher walnuts

1 cup butter or margarine

1 cup firmly packed brown sugar

½ teaspoon ground cinnamon

Pre-heat oven to 400.  Arrange cinnamon crackers in a single layer on a 10 x 15 inch jellyroll pan lined with foil.  Sprinkle walnuts evenly over crackers.  In a heavy small saucepan, combine butter, brown sugar and cinnamon.  Stirring constantly, cook over medium heat until sugar dissolves and mixture begins to boil.  Continue to boil syrup 3 minutes longer without stirring; pour over crackers.  Bake 8 to 19 minutes or until bubbly and slightly darker around the edges.  Cool completely in pan. Break into pieces.  For an added “fancy” effect drizzle white and/or regular chocolate chips over cooled bars.

Printed holiday plastic bags, seasonal plastic containers or brightly colored take-out boxes from the craft store lined with tissue paper make nice packaging.

This Sweet and Salty Party Recipe Mix came from my friend Michelle.  It has been a hit year-round at both parties and as a gift.  A warning though, the combination of salty and sweet makes it hard to stop eating once you start!

Sweet and Salty Party Mix

6 c. Crispix cereal

2 c. pretzel sticks

2 c. Fisher salted peanuts

2 c. raisins

10 oz. chocolate candies  (like M&Ms–I like to use the mini version)

16 oz. melted white chocolate chips

Mix dry ingredients.  Melt chips.  Spread melted chocolate evenly over mix.  Spread mix on wax paper until white chocolate hardens.  When hard break apart and store in an air-tight container.

Ideas for gifting:  Package in holiday themed plastic bags and tie with a ribbon.  Use holiday colored plastic containers  wrapped with a bow, or inexpensive holiday tins.

Handmade from the Heart Gift Idea: Magical Holiday Brownies

MAGICAL HOLIDAY BROWNIES

These moist and chewy brownies come together like magic when prepared!

Just one more week to enter the Handmade from the Heart Holiday Sweepstakes!

½ teaspoon each salt and baking powder

1½ cups all-purpose flour, divided

½ cup unsweetened cocoa powder

1 1/3 cups granulated sugar, divided

¾ cup each semi-sweet chocolate morsels and white chocolate baking chips

½ cup Fisher Walnut Halves & Pieces, coarsely chopped

½ cup vegetable oil

¼ cup water

3 eggs

1 teaspoon vanilla extract

In bowl layer dry ingredients evenly as follows; salt, baking powder, ½ cup flour, cocoa powder, 2/3 cup sugar, chocolate morsels, 1 cup flour, 2/3 sugar, white chocolate chips and walnuts. Cover container with lid and attach these instructions.

Combine contents in container with ½ cup vegetable oil, ¼ cup water, 3 eggs and 1 teaspoon vanilla extract. Mix until well blended. Spray 8 or 9-inch square baking pan with no-stick cooking spray; spread batter in pan. Bake 30-32 minutes in preheated 350°F oven.

Yield: 16 brownies

Tip: When preparing recipe for your use, omit layering ingredients and prepare according to instructions.

Gifting Ideas:

  • Layer the dry ingredients in a see-thru container to create a sand-art look for a creative gift-giving idea. Be sure to attach as a hang tag the instructions for preparation.
  • If preparing this recipe and giving baked brownies as a gift, individually wrap by placing brownie on a flattened baking cup, wrap in plastic wrap or cellophane.
  • Give a 2-quart clear mixing bowl that has the ingredients layered already. In this way the gift recipient can simply add the other ingredient to the bowl, mix, and then has a bowl to keep!

Handmade from the Heart Gift Idea: Cherry-Almond Loaves

CHERRY-ALMOND LOAVES

This festive, cherry bread is the perfect treat for a brunch or dessert after a holiday feast.

1 cup dried cherries

¼ cup cherry or orange juice

1¾ cups all-purpose flour

2 teaspoons baking powder

1 teaspoon baking soda

½ cup (1 stick) salted butter, softened

¾ cup granulated sugar

2 eggs

½ cup sour cream

½ cup almond extract

¾ cup Fisher Slivered Almonds

½ cup sweetened flaked coconut

In small bowl, place cherries and juice together. Spray four mini loaf pans with no-stick vegetable spray; set aside

Preheat oven to 325°F. In medium bowl combine flour, baking powder and soda; mix well. In large bowl cream butter and sugar using an electric mixer. Add eggs, sour cream and almond extract. Gradually add flour mixture to butter; mix well. Thoroughly drain juice from cherries. Fold in drained cherries and almonds. Spread batter equally in prepared pans; sprinkle with coconut. Bake 30 to 32 minutes or until toothpick inserted in center is clean when removed. Remove from oven; allow to cool on rack.

Yield: 4 mini loaves, or one 9 x 5-inch loaf

Gifting Ideas:

  • Celebrate the gift of friendship by giving a homemade loaf of bread wrapped in colorful cellophane and tie with a festive ribbon.
  • Pressed for time during the holidays? Prepare these mini loaves in advance, wrap securely and freeze for up to 1 month.
  • For the baker on your list, keep the baked bread loaf in the mini pan and wrap. Attach recipe card so the recipient may prepare again and remember you each time they bake this bread.
  • As an added gift, attach a set of measuring spoons to the bread to complement the theme of the gift.
